Onion Rings

Low Carb Onion Rings

Ingredients
Pork rinds (original or flavored- your choice)
Onion
Eggs
coconut oil
Seasoning (optional)

Directions
1. Take a few handfuls of pork rinds and either hand crush them in a bowl or bag, or put them in a blender (as I did), until it forms somewhat of powder. You can add any seasonings you'd like at this point. This will be the breading for your onion rings.

2. Cut a few "rings" from your onion

3. Whisk 1-2 eggs (just depends on how many onion rings you're doing) together in a bowl. Put your pork rind powder in a separate bowl, and gather your onion rings near. It's time to bread them!

4. One at a time-- dip the onions in the egg, then transfer to the pork rinds and cover completely, then lay on a plate.

5. Heat oil in a frying pan on medium high heat and then add your onion rings. Turning them a few times, fry until breading is crispy and golden brown. Lay on paper towels to cool a bit and soak up any extra grease. Done. Enjoy!

How To Boil Eggs Perfectly

INGREDIENTS
8 large Eggs (or any number you want)
4 cups Water (or enough to cover eggs in the pan)
1 tbsp Apple cider vinegar (or white)
1 tbsp Sea salt

INSTRUCTIONS
Place eggs in a single layer at the bottom of a large saucepan or pot. Add enough water to cover the eggs with at least 1 inch of water over them.

Add a tablespoon of vinegar and a tablespoon of sea salt to the pot. Stir gently.

Place the pan onto the stove over high heat. Bring the water to a rolling boil.

Once the water is boiling, set a timer to the following number of minutes based on how you best enjoy your eggs.  Personally I love making my deviled eggs from the 10 minute boiling option.

1 minute - Very runny soft boiled eggs
2 minutes - Runny soft boiled eggs
3 minutes - Very gooey medium boiled eggs
4 minutes - Gooey medium boiled eggs
5 minutes - Just set medium boiled eggs
6 minutes - Medium-hard boiled eggs
7 minutes - Very creamy hard boiled eggs
8 minutes - Creamy hard boiled eggs
